Year Of Me Update: Mostly Orange Soup
So I have been trying to eat better, according to my nutritionist I need to eat more savory. Which is hard since I have a sweet tooth. But I have been diving into different soup recipes since it's fall. So this recipe I threw together I call it mostly Orange Soup.
Ingredients
1 carrot
1 sweet potato
1 celery stem
1 cup of frozen butternut squash cubes
1 bell pepper (the color is your choice. I had a yellow one)
2 tablespoons of bbq sauce (optional but highly recommended)
1/2 sweet onion
2 chicken broth cube
1 1/2 cups of quinoa
Chop all vegetables to a size of your liking. I did mince the onion.
Peel the sweet potato **before** chopping. I learned the skin is bitter when in this soup.
Bring 7 cups of water to a boil. Add the chicken stock cubes and any other seasonings you like. I used Badia Complete Seasoning to taste.
Add the chopped sweet potato and carrot first to cook for 5 to 10 mins.
Add the rest of the vegetables and let simmer for 20 to 30 mins until everything is soft.
Add your quinoa in between that 20 to 30 min cook time so everything cooks together.
Throw your bbq sauce in the mix and let that disburse.
When it's all done you should have a soup. The quinoa won't soak up all the liquid so don't worry if you can't see it floating at the bottom.
This is a summary of what I did because I'm experimenting a lot with what I have in the house. I should start writing down what I'm doing as I'm doing it. But I hope you like it. Tell me how it goes.
