Stuff I've been doing
So far this year I have been doing my best to stay active in the Year Of Me series. I have been consistent for the most part, a lot of it has been food based. But I did finish my hat... finally. I used one youtube video this time and made my own puff for top.

So here are some recipes I have tried over the weeks.
Keto-ish chocolate chip cookies
The cookies I made aren't really keto. Low carb maybe, but due to human error and working with what I had in the house we'll just call them low carb chocolate chip cookies. I thought, I bought brown sweetener but it was actually brown sugar and sweetener. I found the almond flour texture not to be too much. I have tried coconut flour and almond flour for brownies and wasn't a fan due to the texture. These cookies don't have that problem. Also I couldn’t find sugar free chocolate chips so that may also be the reason I like these more. Dark chocolate chips could have been a better substitute but I was having a fatkid moment.

Next we have my egg roll bowl attempt. It was supposed to be keto friendly but I couldn't get my hands on the sesame oil and the ginger paste. Again over here we work with what we have. What I liked most about this recipe is that its easy and everything goes into one pan and it doesn't take too long to make. The meat of choice I used was sweet Italian sausage. Tasted lovely. Also try it with Schzuan sauce, not sure how keto that is but it tasted good.

So this crack dip, if you've listened to the podcast you know I've made this twice. The taste sneaks up on you and you find yourself craving it out of nowhere. The hot honey Ritz crackers do add to the flavor as well but that is completely optional. Its super easy to make and it serves its purpose.

Moving forward I am going to try to carve out more time for me. I do enjoy food but I also want to experience more this year. I miss exploring. So some time this year I am going to expand on what I do for me each week.
